Honestly, as a huge breakfast lover, I'm surprised that this wasn't one of my first posts.. I'll probably make some recipes just for oatmeal alone since it's practically all I've been eating for the last 5 years. 🤯😁

The base for almost all the recipes is oats, greek yoghurt and eggs. Not the most versatile range of ingredients, but I promise you these are so simple, delicious, nutritious and filling!

I'm a very big fan of having something "desert-like" for breakfast. There are very few days when I'm craving something savoury..

I would say that these recipes are also student-budget-friendly. The thing is, I used to get snacks and sweets almost daily and think I couldn't spend too much on the "expensive healthy" ingredients, but the reality is - it might just be all about priorities..

Moving on, here are the recipes for today!

As a big sweet tooth - four out of five of these are sweet:
1. Bowl of chocolate heaven
2. Fluffy pancakes (you can also use oats)
3. Sweet scrambled eggs (trust me on this one)
4. Apple oatmeal muffins


and the non-sweet option:
5. Egg tortilla (hits right every single time)

1. Bowl of chocolate heaven

Starting with my favourite..

 

INGREDIENTS

In a small cooking pot:

40g oats (half a cup)

1 cup of water

5-10g dark cocoa powder (the more you put more desert-like it will be)

1tbs of honey (you’ll also put some on top so you can put less inside, but do put at least a little)

1 egg

 

Put on the stove on high heat and stir until it starts boiling. Lower the heat, and stir here and there. Let it cook until the consistency you like. It shouldn’t be too “liquidy”. More like a pudding almost.

 

Once it’s done – put it in your favourite bowl and add your toppings!

 

Toppings that I put:

100g Greek yogurt (50g low fat, 50g regular – low fat has more protein)

more honey

seeds and fruits

 

You can also add a banana into it when cooking or not add an egg, it’s very versatile, but this is what I put to get a heavenly chocolate outcome. ⬆️

2. Fluffy pancakes

This one even has 25g of protein!

 

INGREDIENTS

In the pancakes:

2 eggs

40g low-fat Greek yogurt

30g all-purpose flour

1ts baking powder

 

Mix the ingredients together, put a tiny bit of butter on your pan and make 2-3 pancakes.

Once you’re done – add your toppings!

 

Toppings that I put:

30g regular Greek yogurt

1tps peanut butter

some honey

some flax seeds

 

For an even “healthier” alternative:

40g oats

2tbs Greek yogurt

1 egg

milk if needed

 

Blend together and make some butter. Keep them small and cook on low heat – otherwise, they might be “raw” inside.

3. Sweet scrambled eggs

This one is perfect if you want something sweet, but light!

 

INGREDIENTS

In the pancakes:

2 eggs

2tbs Greek yogurt

Mix and cook on butter as you would your regular scrambled eggs.

 

Toppings that I put:

Greek yogurt

some honey

 

I don’t think I’ve seen anyone make “sweet scrambled eggs” and I get it sounds and might look a little weird but I really like it.

4. Apple oatmeal muffins

I’ve had some great and some terrible results when trying to make “oatmeal” muffins so here’s a recipe that turned out good every single time:

 

INGREDIENTS

4 apples

2 eggs

1 cup of oats

splash of milk as needed

2tbs of honey

1/2 baking powder (out of 1 little packet)

some cinnamon

dark chocolate on top

 

Here I also added flax and chia seeds but I would NOT recommend them as they can have s specific taste when baked..

 

Cut your apples and blend everything together. Pour into the muffin silicones – about 3/4 of each little cup. Add chocolate if you’d like or any additional fruits..

 

Bake for around 20 minutes in 180° degrees.

 

If you have a “microwave oven” make sure to place them high and you might have to bake them a little longer.

You can also use fewer apples and add/or use just bananas and add cocoa powder.. In the end, it’s just oats and they work with almost anything so don’t be afraid to look some other recipes up or just experiment on your own.

 

The only thing I’d suggest you don’t do is combine carrots with cocoa powder and definitely don’t put flax seeds into the mixture. Don’t add too much milk because they will taste and look “raw”. 

5. Egg tortilla

This is my go-to if I had an early morning class and didn’t manage to eat before and I’m craving something lunch-like to keep me full for longer.

 

INGREDIENTS

2 eggs

1 slice of ham (optional)

1 small tortilla (it should work with a larger one if you put more eggs)

a few cherry tomatoes

1 carrot

some parsley, salt and pepper (spices of your choice)

 

Additionally, if you’re feeling fancy:

some tzatziki sauce

some aceto balsamico

 

You whisk your eggs and pour them into the pan, but don’t scramble! Medium heat. Put your spices in (salt, pepper, parsley..) and lay a slice of ham on top. On top of all that lay your tortilla and press a little on the edge so that the eggs stick to it. After a minute/two flip the whole thing. 

 

While that is cooking, you cut your carrots and tomatoes.

 

At this point, the tortilla should start smelling way too good to be true and have a little bronzy look.

 

You serve it with some additional sauces if you’re feeling fancy and that’s it! 

Super simple and mind-blowingly good. Honestly.

Although almost all of these are based on the same ingredients, each combination has its own flare and is worth giving a try if you’re into these types of ingredients to begin with.
